Meet NeeCee

A love for the art of cooking and the history & culture of food is in my DNA. From offering up simple weeknight dinner ideas & tips on building a well stocked kitchen to teaching cooking classes & restoring antique tabloid kitchen art — my passion for the culinary arts runs deep.

In my early life, I was an Airforce brat. I like to say I lived in every state for about 10 minutes. I often feel this is why I have such a varied palate for regional cuisines across the nation.

Through his Air Force experiences, my father (A Survival Specialist) was responsible for my introduction to unique foods from his experience all over the world. He spent time in England, Korea, France, Japan and several other countries. He made good friends all over the world and brought them home to Mom for dinner. Mom would cook them traditional fare from the South (Dad was born in Georgia and Mom was born in North Carolina).

Being a survival expert, my father also introduced me to some of my less favorite culinary experiences, such as camping in the desert in California and sampling rattlesnake, grubs and other creepy crawlies. He is also is why I won’t eat anything offered to me before I am assured of its contents and origins of development and more importantly… species.

But God love him (And I assure you, I adored him), he also bought me my first easy bake oven, took me to a food judging competition at the Orange County Fair in California. It was 1968 and I was only 11. I loved it and was hooked. I would sit in his lap and watch Julia Child and The Galloping Gourmet.

Through NeeCee’s Kitchen, I hope to cultivate that same love & connection I have found in the kitchen and around the table with you, the NeeCee’s kitchen Community.

Intuitive Cooking | $125

This class is all about the basics & getting comfortable in your kitchen. You will learn how I organize my home kitchen for usability. Then together we will create dishes featuring three french sauces that can be used as the foundation for hundreds of meals — including a family favorite, bechemel.

Art of the Dinner Party | $125

This class teaches you how to rediscover the art of hosting a multi-coursed dinner party. Each session will include: a craft cocktail, appetizer , two side dishes, a main course (beef/chicken), and two desserts. The menu will change month to month. This class includes a workbook & lessons on setting a proper table.

What To Have On Hand For A Well- Stocked Refrigerator

Here’s my list of the top ‘must have’ items for your refrigerator. These are items you will use often. Buy only what you need for the week, as refrigerator life on many foods is very short. Keep an eye on expiration dates on fridge food.

Make an effort to use up all butter, eggs, milk etc. before buying more. Keep in mind that many back-ups can be frozen and brought out as needed. Of course, everything depends on what you and your family like to eat. My husband is the king of salsa and puts it on everything. I keep a big jar handy in the fridge.

Three Basic Seasoning Blends for A Well Stocked Kitchen

I can live life quite satisfactorily with Salt, Pepper and three of my favorite blends. You can buy these blends in most grocery stores; however, I prefer to make my own in order to control the ingredients and ratios.

My number one blend is Herb de Provence. Herbes de Provence (or herbs de Provence) is a blend of dried Provençal herbs and spices. Herb de Provence is a French inspired blend of herbs that goes great on Chicken, Fish, roasted vegetables and more.

The Art of Creating An Intuitive & Well Stocked Kitchen

Few things garner culinary creativity better than a well-stocked Kitchen. The right pot for the right recipe, the right knife for the right cut is essential. Gadgets, utensils and bowls… oh my!

I will be writing a three part series on what you should have for a well-stocked kitchen starting with hardware.

I will also give you a list of things in a well-stocked larder (your pantry of dry goods), your refrigerator and your freezer.
